Well, Thanksgiving week has arrived...And this Tuesday I am inspired to be thankful for all my many blessings... I am also inspired to be super excited and happy to get to see my mom, sister, nephews and niece : )) I am going to be baking the desserts for our Thanksgiving dinner... What FUN! : )) Tuesday and Wednesday is going to be fun baking and preparing... My sister and I always make really neat place cards for our dinner table... I am looking forward to doing crafts and a little shopping (well browsing). We always play FUN games! The best part is ALL the WONDERFUL food! Can't wait! SO the pumpkin patch was awesome... The people are so nice and friendly... We got to ride a huge hay ride for free... The patch was huge!!! The pictures were fun :)

We lucked up on pumpkins... We will be going back on Halloween Eve next year to buy pumpkins because we got four pumpkins for 17$ :) : ) Its Buy one get one free... but the large pumpkins are like 12$ bucks but they are huge and heavy! :)

This greets you as you walk in front door :) We are very proud of our first Halloween Craft! :) All the kiddos point to it daily and say "my pumpkin" The kids had a great time making the faces for there Jack O Lanterns :) :) We also decorated leaves with colors and rhinestones :)

Noah really loves our scarecrows outside... he always talks about it as we leave or go outside :)

So its Halloween week right!? well hubby and I started watching the classic movies "Halloween" We have watched one every night this week... its Friday and we are about finished... I look forward to watching the rest of em with Dalton tonight :) I love classics!

I look forward to tomorrow morning! :) A trip to the pumpkin patch, picking out pumpkins and we are going to carve them :) Trick or Treating and then we are having friends over for Chili, roasted whinnies and marshmallows... And lots of fun games! :))) pretty excited about our Halloween weekend:)

Apple Butter

6 pounds of apples. After weighing, peel, core and chop them (It's tastiest if you use a few different kinds of sweet apples, like Gala, Fuji, Braeburn or the Delicious varieties)
4 cups of sugar (you could probably use less)
3 teaspoons cinnamon
1/4 teaspoon salt.

Mix the dry ingredients then pour over the apples and toss. Cook in a crockpot on high for an hour and then on low for 10 hours. Remove the lid and cook for another hour. Then blend it on low to make it extra smooth for a few mins. you might want to do it in small amounts because it is hot and can burn you!
When walmart had the glass jars... I bought a couple.
Jar and freeze :)

SOo! It's been a while! :) we have been super busy though and I have been doing a lot self evaluating over the last month or so... I have been trying to focus on family and finding who and where I want to be in my life. I am sure this is something we all do, bc its what helps us grow! :))
Over the last two months I have decided to only keep three children in my home! :) I was wanting to accept more in October but I think with the holidays it would be better not too : )We had our first week of lesson plans last Monday.. It went well :) The kids do good sitting at the table, they love to do crafts...and they adore circle time! I have enjoyed it... This week we are discussing BUGS! : ) I am excited for our bug adventure outside tomorrow : ) I made jello with gummy worms : )

I have decided to start calling my grandmother on Tuesdays during my kiddos nap... just to keep up with her more and give her a little conversation : ) Also
I am hoping to improve my sisterly bond, living a part for so long has kinda put a strain on our friendship... I am hoping her and I can start reading books together and sharing more about one another... : )

SO READY FOR FALL!!!!its a coming and i cant wait to put up decorations... I have been scoping out all the "Southern Living Mags, and Better Homes!" : ) JEALOUS! haha nah, this fall is gonna be great... can't wait for foliage,roasted marsh mellows, evenings on the patio, apple cider, and family and friends! :))

I am going to start decorating for fall around Sept 19th or so! :)) CANT WAIT!
I am also thinking about joining a hip hop dance class with a friend Danielle : ) lol its on Tuesday evenings which is PERFECT for me! :)) the first class is free so heck ya! :) but I am debating on that, Zumba, or Yoga! ; ) Not sure yet...

Well Fathers Day was very special to us! Daltons dad got to visit us!:)) we had a great weekend grilling, swimming, going to the park!

We spent fathers day sleeping in a little! Waking up having lunch at "Hook Line * Sinker" (best catfish in town!:)) we then went and Paw Paw got Noah his tricycle and swimming pool for his Bday! WE went home to rest and visit..We then spent the late afternoon walking to the water fall and creek! Its beautiful here...
After this we ate Red Lobster!:) Such a great day!

Anniversary! Our get away!:)

Our Anniversary this year we wanted to really focus on the simple things in our life and the love we have for Noah. We thought of going and staying the night away from home somewhere ;) we thought of just going camping one night, we thought of going hiking! All of these things would of been great. Well, Dalton and I both work so we just decided to make it an anniversary weekend:) So we got a sitter for a few hours and went and ate at Carrabba's Italian Restaurant! Which was really good!! Then we went for a walk around the mall and I got hubby a new hat!:) (go gaters) then we came home! The next day we got up and played outside with Noah! And grilled hamburgers and sausage! :) Noah loved it he sprayed us with the water hose and that was is favorite part! THE WATER! lol:)

So after eating and getting a little cleaned up, we went to Hidden Springs walking park! :) Its so awesome... its miles of walking trails, bike trails, bike parks, dog park, its in the woods though and secluded! It has little creeks and wooded picnic spots!

I enjoyed this so much and we plan to go back this weekend earlier in the day so we can walk farther:)

This was a really great anniversary memory for me ! I love my husband and son very much! ~MAY 24th 2010~ :)

Apple Crumb Cake

This is SOOOO GOOOD!~ lol

This recipe is astoundingly easy. It's listed as "Quick Pear Streusel Coffee Cake" (I didn't have pears so I used apples) and "quick" is the optimal word: in just a few minutes, your house or apartment will smell wonderful. The resulting cake is beautifully moist, cinnamon-y and deeply comforting.

For the cake:
Unsalted butter, for the baking dish
1 1/4 cups all-purpose flour
2 1/4 teaspoons baking powder
1/2 cup sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 large egg
1/2 cup whole milk
4 tablespoons unsalted butter, melted
2 apples peeled and diced into chunks

For the streusel topping:
1/2 cup sugar
1/4 cup all-purpose flour
3 tablespoons cold unsalted butter, cut up
1 teaspoon ground cinnamon

To Prepare:
Heat the oven to 400 degrees. Butter an 8-inch square baking dish.
To make the cake, combine the flour with the baking powder, sugar, salt and cinnamon in a medium bowl. In a separate bowl, beat the egg and then mix in the milk and melted butter. Pour the wet ingredients into the dry ingredients, add the pears, and mix well. Pour this into the buttered baking dish.
To make the streusel, mix the sugar, flour, cold butter, and cinnamon in a bowl by pinching them together with your fingers until well combined. Sprinkle over the top of the batter.
Bake the cake for 30 to 35 minutes, until it is golden and dry on top. Cool in the pan, and then cut into squares. This cake keeps for up to 4 days, covered, at room temperature. Trust me, though: it won't last that long.

Peach Cobbler!:) :)

Peachy and creamy, yeah its peach cobbler! I love it and this is my way of doing it and its pretty simple and quite tasty!

1 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1 stick butter
3/4 to 1 c. milk
1 lg. can sliced peaches
1 tsp. cinnamon (optional)
3 tbsp. sugar (optional)

Directions:
Melt butter in a 2 quart casserole dish in 375°F oven while combining flour, sugar, and baking powder. Add milk to the dry ingredients and stir until blended. Pour peach juice into ingredients until blended.

Pour mixture over melted butter and stir so mixture is smooth in pan,

Add peaches on top and pour tablespoons of peach juice and sprinkle with cinnamon.

Bake 30 to 40 minutes at 375°F.

I can not explain how sweet and good this is and its kinda cake like!

Banana Naner!

Its been a busy week at the Brackins home. We have been preparing for Mothers Day craft week and putting all of our winter clothes away and bringing out the shorts and summer stuff.

I mixed up my hummingbird feed and hung out my feeder, I am excited to see the hummingbirds out the window.

Noah is at the age of enjoying birds and squirrels. He is too funny, when he sees either one he will go to trying to talk and pointing!:)

Well I thought I would share this weeks dessert with you! So you gotta love banana pudding right! Well of course! So everybody has there way of making it but here is mine!!!

Ingredients:
1 Box of Instant Vanilla Pudding (family size)
1 Box of Nilla wafers
4 to 6 banana's
half an 16 oz tub of cool whip.

Directions:
You make the instant pudding by following directions on box.
cut up bananas in small chunks and add to pudding and mix well.
add wafers to pudding mixture and stir well. even crush some of the wafers and mix.
add half a tub of cool whip and stir into mixture well.
crush wafers and sprinkle on top!
~ for detail you can line the outside of banana pudding with wafers and crush and sprinkle on top!!!~~~

This is a recipe our family enjoys all week not to mention the kids I watch daily! :)

Sweet Friday Mornings!

So hubby is off on this lovely Friday and the both of us love breakfast so I decided a long time ago to dedicate Saturday mornings to a good ole breakfast! But lately hubby gets Fridays off so I decided kids or not to make Friday and Saturdays my breakfast days!!! So today I made French Toast! And its so super good!!!

OK so basically four eggs will make six pieces of toast... I made ten pieces so I used six eggs just to be safe!
bread
eggs
butter
Cinnamon
powder sugar
syrup

*beat the eggs in a bowl
*add 2tbs of Cinnamon to bowl of eggs and beat Cinnamon into eggs well
*pour egg mixture into a flat bowl or pan only pour enough for one piece of toast at time in pan. If you pour the whole mixture Ur bread will be WAY to soggy!
*heat 1 to 2 tbs of butter in skillet on medium heat
*dip bread into egg mixture and sprinkle Cinnamon on top flip bread and add Cinnamon to other side flip back in forth four times.. be sure to keep the bread moving or it will get to soggy and you will not be able to pick it up.
*After you have dipped bread in egg mixture and topped with Cinnamon place it on side in pan let it cook for three to five minutes then flip, let the other side cook three to five minutes as well...
*Now put bread on plate sprinkle with powdered sugar and top with Syrup! ! MMmmMMM good! I added strawberries to mine just to give it an extra sweet touch! lol:) Enjoy!

*pork chops with FlaVoR!~

Tonight I made some of the best pork chops ever and the recipe is super easy!!!
I really think chops don't have a lot of flavor but these chops are great!

OK what ya need:
4 to 6 pork chops
1 can of cream of mushroom soup ( u can use cream of chicken if u prefer)
3/4 cup milk
1 tablespoon butter
garlic salt
lemon pepper
I even added creole season but thats up to u!

HoW to cook?

:Preheat oven to 350 degrees
:Season pork chops with garlic salt and lemon pepper. Melt the butter in a large skillet over medium high heat. Saute the pork chops in the butter for about 5 minutes per side.
:In a separate medium bowl, combine the milk and soup. Place the pork chops in a 9x13 inch baking dish and pour the soup mixture over the chops. Bake at 350 degrees for 45 minutes.

TIPS: If you like thick gravy you will need to omit the milk! I made pretty thin gravy in the picture above my second one was loaded with gravy and both are great taste! The picture really doesn't do it justice lol

A Day on the Lake

The weather was great Monday afternoon and we ate dinner with mama. We had her really good spaghetti! Then we took a ride on the paw paw's boat! The lake was great! Noah was not to sure what to think at first, but he warmed up pretty quick! He loved to pretend like he was driving!!!:)

Okay so Saturday I took an afternoon ride just down the road from my house! I took the camera and wanted to just try and capture pictures. LOL I wish I could tell you how many pictures I wish I could of taken. But when I would take the pics, the pictures did not justify how beautiful the scene really was! So I ended up only really liking three of the pics from a whole afternoon drive. I like little rides just to jam out to my music, sing as loud as I want and just think. I guess its my therapy! ha! but it is relaxing to me that is!

Easter was great! Fun crafts, baking, good food, and family and friends have made it awesome. Noah loved Easter egg hunting!!!:) I got some rest and just enjoyed the sunshine. Saturday I got a steal on an awesome chess set with a glass chess board for A DOLLAR ha! yes a good dollar and its nice! I also snagged an awesome wooden donmino's set. The ones that are super small and I paid a buck as well. Got an awesome CROCK POT COOKBOOK! lol for 1$ :) and then I got a bird book for my mother! Easter dinner was great at moms. The food was delicious and we enjoyed the time with mom and Charles. It was a nice windy day and Noah had a blast! Thank you Jesus for my family.

Well, it was nice yesterday... We went stroller riding before lunch!!!To the park after nap! And wagon riding before supper!:) Noah loves the outside. (what boy dont) he has been itching to go outside. Going over to the glass door everyday pointing and say "GO!" We joined friends at the park and even played a little putt putt! well the kids tried! lol we had such a nice day! I love my life!

OuR WeEk!

Well, week two of babysitting in my home has about came to an end.:) I have had a very interesting week. The kids are great, the parents are crazy. LOL but I am prob a little crazy when it comes to Noah to. The three year old I watch are pretty great. We are learning the letter A, and our colors and shapes. The babies painted with apple sauce and made there hand prints. :) The only difficult part of keeping kids is when they don't get what they want lol but mine are all well behaved and good listeners. I really lucked up:) I did have a rocky last two days seeing as I am keeping a little 18 month old who has never stayed away from home. She cries and screams a lot. But that will just take some warming up too!!:) I wander how this summer I will adjust my bones to being inside a lot more than usual seeing as in I have a lot more than I thought I would. Hubby is doing great at helping on one of his days off with taking them outside with me and to the park! :) I am ready for a well needed rest up weekend.

My sister got me this beautiful cross for my huge living room wall.. I LOVE IT. I had bought some pictures a few months back to go here and was wanting a cross for the middle of it. AND it looks great!!! Thank u sis... I also found this awesome cross wood candle holder at cracker barrel for my mantle and my sis also gave me these adorable candle holders that match it perfect!! love it!!

Winter has really been what you would call winter this year for us! Its been so awesome having all the snow and beautiful scenery to gaze at. I am so glad we moved. Little Noah has had me busy. I've enjoyed every minute of it. We have a calendar and do daily activities together, he loves being on a routine and is doing so good at going to bed and sleeping through the night. He is very busy during the day and plays really well with others. He has lots of little friends he loves to play with.!

We took paper and colored the mask purple and green, I spread the glue and Noah sprinkled gold glitter, and then I dotted the glue and helped Noah put the little shiny gems on the mask. He smiled and pointed! Very fun!

Vday Craft for mom!

I made this little tin with some of my scrap booking materials. I thought making something was even more special on a day like this. So I cut paper to fit lid, taped it down and added all the little birds and quotes. Inside was VERY pink strawberry cupcakes and strawberry iced brownies!

I spent the day before Vday making twenty four cupcakes, fifteen brownies, and a cherry cheesecake!!!: ) All for my family!

These pictures recap of our sweet little day spent together for Valentines day. It started off with Chocolate Chip Muffins. We met mom for a Valentines Special for the kids. It was hot dogs, and singing and crafts. FUN! Noah spent the night with Nana and Dalton and I sipped French Vanila mixed with English toffee Cappuccino's and just took a drive up into the hills toward Eureka Springs. Tiny snowflakes fell, just enough to make it so beautiful! We ate Mexican at a little cottage. Went home and snuggled and watched a movie. I heart my family! V-day 2010

It's finally warming up a little!

I know ladies I haven't been keeping up with my blog lately. So SORRY The holiday season I guess. wow there has been so much snow!! like seriously. On top of that its been freezing but its warming up a little now. Well Christmas went great, Noah got lots of stuff. He really liked opening gifts! It was so great to be here close to my mama! We just love our life here in North West Arkansas!

Trim the Tree!

Noah loves the christmas tree! We are now working on finishing up a few home decorations.. Need a tree skirt and we left our stockings in Mississippi! I'm so mad lol. But we are so ready for chirstmas!!!!! I have all of noahs shopping done and I only have two people in the family left and of course hubby! yay! do it early it always cuts down on stress and money!

Hello ladies... I know its been forever since I've blogged. Sorry I have recently started my job at Kirklands and before that I was going crazy trying to find one. SO now I have got a little more settled. This is what we have been up to..

Tater Tot Caserole...

Oh its delicious, easy and cheap what more could ya want?

1 pound hamburger meat
1 can cream of chicken
1 can cream of mushroom
2 cups of shreaded cheese
1 half or whole bag of tater tots.

Brown you meat, drain
mix meat and both cans of soup.
Spread bottom of caserole dish.
Spread tater tots on top
place in oven on 400 for 25 minutes.
in 25 mins, take out cover with cheese back in oven for 10 mins.

Its so good. and you can serve it with veggies 0n side. We like corn!

The weather was chilly but it was nice. We love fall and Noah loves his stroller. We enjoyed walking around looking at the houses with fall decorations.

Dog Festival! October 3rd 09

Lots of fun to see all the different dogs. They had lots of races and a costume contest for halloween. TOO FUNNY! we missed the races but made it to catch the costume contest which was really cute... Noah loved seeing all the doggies...

Apple Festival October 3,2009

This was so much fun, mom, charles, dalton, noah and I went to the apple festival it was fun lots of crafts and some really good apples. We had lemonade and funnel cakes... (mmm so good) They had the biggest turkey legs lol people looked funny walking around eating them and my crazy ole dad had to go to the booth and ask to take a picture with one. ( you would of had to just see the people eating them lol)

THE BEST CHICKEN SPAGETTI!!!!!

Tonight I made some awesome chicken spagetti. It might be the way everyone does it but it was just so good lol. Noah loved it... I'll be posting more pictures and things by the weekend, I've had a busy week and thought I'd share a little of my cooking for the week.

Three of four chicken breast (depending on family size really)
1 can of cream of Mushroom,
1 can of cream of chicken
1 can of Rotel
Velvetta Block (small)
1/3 cup of water
Pasta noodles (your choice)

Get your pasta cooking, and boil chicken and after boiled cut into shreaded pieces
In a seperate boiler or if your noodles are done drain leave in drainer and use that boiler to
add your soups and 1/3 cup of water
get it heated on med/ low heat add cheese and rotel stirring so cheese doesn't burn
salt and pepper and after cheese is good and melted add noodles and chicken and stir. ( or you can serve on top of noodles and just add chicken to mixture. Your choice)

This is easy and very good!!!

How to make easy baked apples

Slice four to five apples into bite sizes, you can peel or leave the peeling on.

Put 1/4 cup of water in the bottom of the baking sheet. Add the apples, 2 tbsp. butter, 2 tsp. cinnamon and 2 tsp. suger.

Bake at 400 degrees for thirty minutes, this is very tasty and smells awesome while cooking.

Wow a beautiful place... we made the mistake of walking for forty five minutes thinking this place wrapped back around to the place we started... NOPE it didnt. lol WE was sooo tired.. We walked all the way back and just forgot the camera for the okotberfest and we didnt stay long at the festival because our legs hurt so bad lol!

We love the mall here you can just drive right up to the store ya want to go to or walk around enjoying music... It was kind of cold and windy but, nice!

We was up early for us lol six am... Noah woke up at seven an hour early for him. And we was out and about to eat breakfast at Dennys, walk around the outdoor mall, have a picnic at the War Eagle Mill, and to check out the Oktoberfest in the afternoon.

Noah loves lemons.. If you take it away he wants more!
